It's a pleasure and sometimes an adventure reading Halk's posts but I respect a man that always let's you know exactly where he stands. Or in our resident reaper's case........exactly where a man lies.

Thanks to all for the kind words much more than I deserve.

Now for the dinner menu hope that what I have selected appeals to all.

here goes

Southern-fried stuffed chicken with roasted red pepper and Vidalia onion gravy

grilled hot wings.

Grilled Chili-rubbed rib-eyes with herb cheese and asparagus bundles.

Down south crab cakes with collard greens and roasted garlic beurre blanc.

Veggies: corn on the Cobb, fried green tomatoes, mashed potatoes with gravy (I know may not be veggie who cares)

Fried mac and cheese for those of us who love comfort food.

Smoked Gouda Cheese grits served with a Grilled maple chipotle pork chop (now that will make you slap your mama)

and of course plenty of good southern corn bread.

Deserts:

Sweet potato cake with coconut filling and caramel

Layered almond cream cheese bread pudding with amaretto cream sauce.

Cream cheese flan.

and to wash it all down: Gallons of good sourthen sweet ice tea.

Come and get it.

Here is one recipe, there are many others but I think this one is the best. BTW do not go to the doctor a couple days after eating to get a cholesterol check the numbers may go off the scale LOL. The ultimate comfort food.


leftover prepared macaroni and cheese, refrigerated for at least overnight (should not be from the box type)
1 cup all-purpose flour
1 teaspoon cayenne pepper
1/2 teaspoon salt
1 teaspoon pepper
1 egg, beaten with

1 cup bread crumbs, preferably Japanese panko (Breadcrums)
as needed oil (for deep frying)
1. Cut refrigerated macaroni and cheese into slices or bite size pieces.
2. Season the flour with cayenne, salt, and pepper.
3. Dredge each piece through the flour mixture and gently tap off extra.
4. Dip in the egg wash and then coat with the bread crumbs.
5. Allow them to rest for 5 minutes so the crust can set.
6. Very carefully drop into the oil and fry until golden brown.
7. Drain on paper towels for a few minutes or place on a rack with a cookie sheet underneath.
8. Serve.
